A great single serve party treat.


1 litre single cream, 60g caster sugar, 2 vanilla pods, split and seeds scraped (or 1 tsp vanilla extract), 10g gelatin leaves, For the crumb: 100g of Carr's Table Water Crackers, 10g of caster sugar, 20g of butter, For the berry compote: 400g frozen berries60g caster sugar, Splash of crème de cassis (optional)
